- 3 Tbsp. granulated sugar
- 2 pinches sea salt
- 7 Tbsp. unsalted butter (melted)
- 1 1/2 Tbsp. lime zest (finely grated)
- 3 large egg yolks (though extra-large would do you no harm here)
- 14 oz. sweetened condensed milk
- 2/3 cup fresh lime juice (from about 1 dozen tiny key limes or 4 persian/regular limes)
- 3/4 cup heavy whipping cream
- 2 Tbsp. granulated sugar (or powdered, to taste)

I have made this recipe 3 times and feel confident in this review. I would avoid using regular limes as they can be too tart for the flavor of a key lime pie - really then, that becomes just a "Lime Pie".
The only substitution I make is the topping. 1 c sour cream mixed with 1 c powdered sugar provides an excellent taste combination with the filling, but confess I have never used whipping cream as the topping component. It may be a taste substitution and dependent on which you are shooting for in the end product.
