Excellent. I steamed the peppers 2 minutes in microwave then stuffed and topped with shredded cheddar Couldn’t tell the rice was cauliflower Also added fajita seasoning to meat mixture We both loved it!! Will definitely make again

Just made this for dinner. I'm still getting use to the cauiflower taste, I'm not a fan. Once baked, cauliflower taste is not as evident. I revised recipe just a little. I used ground turkey and I cut peppers in half before stuffing them (a whole pepper would be too much to eat). I opted to add shredded mozzarella cheese to half of my peppers. Next time I think I would add more salt and roast peppers prior to stuffing them.
