- 6 Tbsp. sweetener (powdered monkfruit/eryhtritol)
- 1/4 cup almond flour
- 3 Tbsp. carbalose (or oat fiber, 21g)
- 1 Tbsp. protein powder (unflavoured)
- 1/2 tsp. baking powder
- 1/4 tsp. xanthan gum (optional, recommended for texture)
- 1/8 tsp. salt (1/4 tsp if using unsalted butter)
- 125 grams salted butter (cold)
- 1/3 cup cold water (didn’t need much)
- 1/4 cup cream cheese (softened)
- 1 Tbsp. raspberry jam (no sugar added, I use Smucker's)
- 1 Tbsp. sweetener (powdered monkfruit/erythritol)
