  • 1 1/2 tablespoons coconut aminos
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon ginger paste
  • 3 teaspoons sambal oelek (or more to taste, can use sriracha instead)
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon fish sauce
  • 2 cups cooked chicken (shredded)
  • 5 ounces baby greens (I recommend Organic Girl baby spinach with bok choy and kale)
  • 4 shitake mushrooms (large, stemmed and sliced)
  • 1 large carrot (shredded)
