- 1/3 cup erythritol (granulated stevia, blend, Pyure Stevia Blend 2x sweeter than sugar)
- 1/2 tsp. baking soda
- 1/4 tsp. xanthan gum
- 1/8 tsp. salt
- 2 eggs (room temperature.)
- 1/4 cup avocado oil
- 1 tsp. vanilla extract
- 1/4 cup unsweetened almond milk (original or vanilla flavor)
- 1 lemon (finely grated)
- lemon glaze
- 1/2 cup sweetener (powdered, same sweetness as sugar)
- 2 Tbsp. lemon juice (freshly squeezed, more or less may be needed depending on how thick you would like your glaze)
- lemon zest (addition, optional--for garnish)
