- 3/4 cup coconut flour
- 3 Tbsp. garlic powder
- 1 Tbsp. paprika
- 3 tsp. pepper
- 2 1/2 tsp. seasoning (your choice, i used roasted garlic and pepper)
- 3 tsp. pepper flakes (or more if you want spicier)
- 1 1/2 tsp. Himalayan salt (+ pepper to taste)
- 4 large eggs
- 2 bags pork rinds (crushed)
- 12 pieces chicken thighs (with skin)
- avocado oil (is preferred for frying, Olive oil will work as well)

It’s was just as Crunchy as I wanted. I improvised by using a mixture of pork rinds and Italian bread crumbs. I cooked it on the convection setting at 400 degrees.

I cooked it in the Air fryer only approx 1/2hr 200C. Super crunchy on the outside and moist inside! Had a little ‘bite’ in the spice which I like 👍🏽 couldn’t really taste th coconut flour ( which is good in disguise for the kids ) . I recommend
