I would probably make this again, very light little pillows of gnocchi. Different for sure from the real things but a good Keto alternative.

Came out great, served it with sweet & hot Italian sausage, sauce and grated parmigiana

This makes little balls of mozzarella. Which taste fine on their own terms, but they don’t really function as a replacement to gnocchi.
