Made these two ways already... as is and with a couple of tweaks. AS-IS they are great not overly sweet or eggy. The only issue is that the brownie part can be a bit too thick to spread.
1. I used Lily’s chocolate chips (approx 1/3 cup) on round two.
2. Because Lily’s are sweetened with stevia I also reduced my Swerve in the batter slightly (visually only, 1/4 cup scoop filled about 3/4 of the way)
3. I added a splash of half and half to help it spread
Then came the fun part... In the cream cheese mixture I added 3 tbsp canned pumpkin purée (real stuff not pie filling) and 1 tsp of pumpkin pie spice.
I have to say, the pumpkin version was the favorite in this house! But I’m not sure if that’s because of the pumpkin or the mods on the brownie part. Either way, this recipe is a keeper
