This was a very good carrot cake. First keto carrot cake I've made and I was happy with everything except I thought there was too much carrot. I read the info added to the recipe page and because the grated carrot was so course, I cut it up as recommended. I know the cream cheese frosting is also a keto recipe, but I didn't care for it. My roommate did eat the frosting.
