- 3 5/16 lb. oxtail (1.5 kg or mixed with assorted bones, chicken feet, marrow bones, etc.)
- 2 medium carrots
- 1 parsnip (medium, or parsley root)
- 2 celery stalks (medium)
- 1 white onion (medium, skin on)
- 5 cloves garlic (peeled)
- 2 Tbsp. apple cider vinegar (or fresh lemon juice)
- 3 bay leaves
- 1 Tbsp. salt (I like pink Himalayan)
- 10 cups water (enough to cover the bones, no more than 2/3 capacity of your pressure cooker or 3/4 capacity of your Dutch oven or 3/4 capacity of your slow cooker)

I used all oxtail which I slow roasted with some herbs, spices and a quartered onion before adding to my pressure cooker.
My carrots and celery were frozen which had no effect on the final result, and I used turnip instead of the parsnip root.
My pressure cooker is a Salton which has presets, but you can't change the pressure or time for them.
Used the "cake" setting which is 45mins long and I assume it's a low pressure cycle so I ran it for 2 cycles, stripped off the meat, then ran it for another 2 cycles.
Allowed the broth to cool and removed the tallow, then used some to make a simple beef stew as well as an oxtail stew.
Cooked the rest down, which turned about 6 cups of broth into 12 ice cubes.
Wrapped them in wax paper (because they're sticky), and froze them.
Now I just add 1 cup of boiling water to 1 or 2 ice cubes, depending on how strong I want the broth to be.
