- 1 cup bulgur (coarse)
- 1/4 cup flat-leaf parsley (packed minced)
- 1/3 cup green onions (minced)
- 1/3 cup fava beans (boiled)
- 1/2 cup zucchini (diced, sautéed in olive oil till tender but still crunchy)
- 3 cloves garlic (mashed with a dash of salt in a mortar)
- 1 1/2 cups yogurt (drained in a mesh sieve over a coffee filter or paper towel for one or two hours)
- 1/4 cup olive oil
- 2 Tbsp. tahini
- 1 Tbsp. pomegranate molasses
- 1 tsp. ground cumin (can replace with paprika)
- salt
- pepper
- 1/2 lemon
- 1/2 cup chopped pecans (toasted and, or walnuts or pine nuts)
