- 1/2 cup green pepper (finely diced)
- 1 onion (large, finely diced)

- 1 1/2 lb. ground beef
- 32 oz. kidney beans
- 16 oz. tomato sauce

- 2 cups shredded cheddar cheese (plus more for serving)
- 2/3 cup sour cream (because you can never go wrong with a little dollop in anything)
- 1/4 cup ketchup
- 2 Tbsp. chili powder
- 1 oz. unsweetened chocolate (grated)
- 1 tsp. salt
- 1/8 Tbsp. sugar
- 2/3 cup bourbon (Kentucky, I used Evan Williams, but you can use whatever you would like)
