Description
This meatball recipe makes for easy suppers. They freeze well so you can make and eat whenever you need a quick meal.
Ingredients

- 4 lb. ground beef (you can mix with pork and lamb too if you wish)
- 12 oz. white bread (or 3/4 loaf - torn into pieces)
- 1 cup Parmesan cheese (grated)
- 1 oz. basil (cut into strips, no stems)
- salt
- 3 cups whole milk

Directions
- Tear bread into small pieces, approximately 1". In a large bowl combine milk and bread. Mix together by hand (the kids would love this part) or use a fork making sure bread is completely dissolved in milk to form a soupy paste-like consistency.
- Add salt, pepper, cheese, basil and mix. Refrigerate for at least 1 hour before next step.
- Gently mix in meat, making sure all ingredients are evenly combined. With slightly wet hands, form 4oz balls (we like to make ours a little smaller for the kids so roll to your desired size). Place on a baking sheet lined with parchment paper and bake at 400 degrees for approximately 20 minutes until medium brown and internal temperature is 160 degrees F.
- Serving suggestion: Place in a casserole dish with Italian tomato sauce, top with cheese and bake till cheese melts.

Instructions need some work. No measurements for salt, just SALT, while everything else has a measurement. It was weird to make. I felt like I was wasting time and food. Also, if you mention topping off with tomato sauce and cheese, put tomato sauce and cheese in the ingredients list. I made it better by halfing the ingredients to serve 2 people. I also baked it for an additional 20 minutes after adding the tomato sauce and cheese. Instructions 4/10. Meatballs 6/10.
