- 6 Tbsp. mustard oil (you can also use vegetable or sunflower oil)
- 2 bay leaves
- 3 cloves
- 2 green cardamom pods (crushed open)
- 1 cardamom pod (black, crushed open, optional)
- 1 1/2 onions (large, cut into rough chunks)
- 3/4 tsp. salt
- 2 green chillies (fresh)
- 2 inches ginger
- 3 garlic cloves
- 1 tsp. salt (or according to taste)
- 1 tsp. Garam Masala
- 1/2 tsp. paprika
- 1/2 tsp. turmeric powder
- 1/2 tsp. coriander powder
- 1/4 tsp. chilli (powdder)
- 5 Tbsp. tomato passata (you can also blitz fresh or tinned plum tomatoes into a paste)
- 800 grams mutton (minced, /lamb*)
- 1 small potato (diced into 1cm cubes)
- 100 grams peas
- 1 handful fresh coriander (with stems, finely chopped)
