- 2 whole cloves
- 1 tsp. chili powder (Kashmiri, or use paprika)
- 1/2 tsp. Garam Masala (Kashmiri, or regular garam masala. Use more to taste as needed)
- 1/2 tsp. fennel seeds
- 1 tsp. ground coriander
- 1/2 tsp. ginger powder
- 1 Tbsp. ginger paste
- 1/2 tsp. kasuri methi (dried fenugreek leaves)
- 10 oz. mushrooms (quartered – baby portobello or white or similar-sized mushrooms)
