- 2 cups firm tofu (cut into bite-sized pieces and sautéed in 1 teaspoon of oil.)
- 1/4 cup olive oil
- 1 cinnamon stick
- 10 curry leaves
- 2 cups water
- 20 green beans (stemmed, cut into thirds)
- 1 1/4 cups coconut milk
- 2 Tbsp. soy sauce
- 1 tsp. sugar
- 13 oz. rice vermicelli noodles (see cook’s tips)
- 1 cup bean sprouts
- fresh mint leaves
- lime wedges
