Karentika (Algerian Chickpea Bread)

Karentika is a traditional Algerian dish that can be eaten for breakfast, lunch, or as a snack. It has an omelet-like consistency and is often served on a baguette with Harissa, a North African chili paste. This recipe for Karentika follows the traditional preparation and is made with chickpea flour. The batter does require refrigeration for at least hours and is best made the night before. For individually sized portions, use a muffin tin. Bake time is 30 minutes. Serve with Harissa or sun-dried tomatoes.
Ingredients
- 200 grams chickpea flour
- 500 mL water
- 1/2 tsp. salt
- 1 Tbsp. cumin
- 3 Tbsp. olive oil
- harissa paste (or sundried tomato paste for garnish, optional)
Directions
- Place the flour, salt, cumin, and half the water in a bowl. Stir well until smooth and without lumps.
- Season with salt or more cumin, to taste.
- Add the remaining water and stir. (The batter will appear quite liquid; this is normal.)
