- 1 head purple cabbage (or half a medium head of)
- 1 apple (sunrise, or local apple of choice)
- 1/2 cup walnuts (roughly chopped)
- 1/3 cup sunflower seeds
- 1/2 tsp. caraway seeds
- 1/4 cup dried cranberries (preferably apple juice sweetened)
- 1/4 cup extra-virgin olive oil
- 2 Tbsp. apple cider vinegar
- 1 Tbsp. Dijon mustard
- 1 clove garlic (finely grated with a microplane)
- 1/2 Tbsp. maple syrup
- 1 pinch fine sea salt (+ black pepper to taste)
