- 1/2 box whole wheat pasta
- 1 lemon
- 1/2 cup balsamic vinegar
- 1 tsp. sea salt
- 1/2 tsp. ground black pepper (fresh)
- 2 Tbsp. EVOO
- 1 lb. kale (stems removed and cut into 1-2 inch pieces *This is about 6-8 cups chopped. It might look like a lot but it will cook down.)
- 1/2 red onion (medium, finely chopped)
- 1 cup dried cranberries (roughly chopped)
- 1 cup sunflower seeds (shelled, I used roasted and salted, but you could go salt free if you wanted)
