- 3 cloves garlic (divided)
- 1 bay leaf
- 3 Tbsp. red wine vinegar
- freshly ground black pepper
- 5 Tbsp. extra virgin olive oil (plus extra for brushing on the grapes)
- 1 cup black grapes (or red, 7-9 oz., stems attached)
- 1 bunch lacinato kale (also called dinosaur or black kale, stems removed, torn into 2-inch pieces)
- 1 fennel bulb (small, trimmed, quartered, and thinly sliced with a sharp knife, mandoline, or Japanese slicer)
- 1 oz. aged manchego (thinly shaved with a vegetable peeler)
