Description
This healthy, hearty soup hails from Northern Italy, where it’s often ladled over slices of toasted rustic bread. For this vegan version we added a nontraditional touch of white miso to boost the savory richness. Canned cannellini beans, also called white kidney beans, are classic, but you can substitute white navy or great northern beans if that’s what’s available. The recipe, which makes 6 cups, is a Yummly original created by Ivy Manning.

- 1 medium yellow onion
- 2 celery stalks
- 1/2 bunch lacinato kale
- 1 large carrot
- 1 tsp. chopped fresh rosemary (finely)
- 3 garlic cloves
- 1 can cannellini beans (15 oz. per can)
- 2 Tbsp. extra-virgin olive oil
- 1 tsp. ground sage
- 1/4 tsp. black pepper
- 4 cups vegetable broth (plus a little more if you’d like a thinner texture)
- 1 1/2 Tbsp. white miso
- salt

Directions
- Chop onion and celery. Finely chop kale (including ribs) to make 3 cups. Thinly slice carrot. Finely chop rosemary, if you haven’t already. Chop garlic, keeping it separate from the other ingredients. Drain and rinse beans and set aside.
- Heat olive oil in a soup pot or large saucepan over medium heat. Add onion, celery, kale, carrot, rosemary, sage, and pepper and cook, stirring occasionally, until vegetables begin to brown, about 8 minutes. Add garlic and cook, stirring constantly, until fragrant, about 45 seconds.
- Now add 4 cups vegetable broth and the beans to the pot. Increase heat to high and bring soup to a simmer. Reduce heat and simmer uncovered, stirring occasionally, until flavors have melded and vegetables are tender, about 20 minutes.
- Put miso in a small bowl. Ladle about 1/2 cup of the soup liquid into miso and whisk to combine. Pour mixture back into the soup and stir thoroughly. Taste soup and add salt and pepper if you like, plus a little more broth if you’d like a thinner texture.

Really yummy soup but i doubled up on the beans and added a dollop more miso for a more robust flavor.
