- 1 lb. kale (lacinato, dinosaur, stem removed and chopped)
- 1/4 red onion (thinly sliced)
- 1/2 cup raw sunflower seeds (if it’s a side use the smaller quantity)
- 3 Tbsp. extra virgin olive oil (good quality)
- 2 Tbsp. apple cider vinegar
- 1 Tbsp. balsamic vinegar
- 1 tsp. maple syrup
- 1 tsp. Dijon mustard
- 1/8 tsp. freshly ground black pepper
- 1/8 tsp. sea salt
- 1/8 tsp. dried oregano
- 1/8 tsp. granulated garlic
