  • 1 sweet potato (large, about 1½ pound, peeled and diced)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • freshly ground black pepper
  • 1 1/4 cups quinoa
  • 2 bunches kale (preferably Lacinato, leaves and tender stems thinly sliced)
  • 1/2 cup roasted pumpkin seeds
  • vinaigrette
  • 3 tablespoons red wine vinegar
  • 3/4 teaspoon Dijon mustard
  • 1 teaspoon honey (alternatively maple syrup if vegan)
  • 1/2 cup olive oil
  • 1/2 teaspoon salt
  • 3 black pepper (grinds of)
  • 1/4 cup shallots (finely chopped, about 1 large shallot)
