Description
Sure, you can buy kale chips these days, but it’s so easy (and cheap) to make your own. Just tear kale into bite-size pieces, toss with a little oil and seasonings, and bake until crispy. In 30 minutes you have a batch of crunchy, healthy kale chips to satisfy your snack cravings. The recipe, which makes 5 cups, is a Yummly original created by Ashley Strickland Freeman.

- cooking oil spray (or a little vegetable oil)
- 1 bunch kale (regular curly kale, 1/2 lb. with stems)
- 1 Tbsp. avocado oil (or other vegetable oil)
- 2 tsp. nutritional yeast (plus more to taste)
- 1 tsp. garlic powder
- 1/4 tsp. kosher salt (plus more to taste)
- 1/4 tsp. crushed red pepper flakes (optional)

Directions
- Preheat oven to 275°F with racks set in upper and lower thirds. Coat 2 sheet pans with cooking spray.
- Holding each piece of kale by the stem, strip leaves from stems and ribs. Save stems and ribs for another use, such as soup. Rinse kale leaves, then spin dry in a salad spinner and tear into 2-inch pieces.
- Transfer kale to a large bowl. Add oil and toss to coat evenly, massaging oil into the kale. Sprinkle kale with nutritional yeast, garlic powder, salt, and crushed red pepper flakes, if using; toss to combine. Arrange kale on the prepared sheet pans.
- Bake kale for 10 minutes, then turn leaves over and swap pan positions in the oven. Continue to bake until kale is crispy, about 10 more minutes.
- Remove kale from oven. While it’s still hot, sprinkle with more nutritional yeast and salt if you like. Let cool before serving.

Epic, so nice. I think it's important to use good fresh kale and hydrate then pat dry before cooking. Oven temp is important.
