Best fried chicken I've made so far of 3 attempts. I didn't think it tasted just like KFC- however, I used Creole seasoning 1:1 in the brine and .3:1 in the breading. With this change it was still a bit salty, but excellent overall, both fresh and after being refrigerated. It was SUPER crunchy and crispy on the outside and dripping with juices down to the bone. The meat itself had flavor too unlike the yield of many simpler recipes that do not use brine.
