I made this by the recipe (except that I halved the recipe). It was great, as is!

Delicious, I doubled the ingredients and added pecans, walnuts and golden raisins. It was creamy and so good.

I have used this recipe since 2006. It's really tasty and easy to change if you like it more sweet or tart. My family asks for it all the time and when I make it I have to make double if I plan to have leftovers. I like to use sweet onions in mine as they complement the carrot and buttermilk better. I also use 1 table spoon vinegar and 1 1/2 table spoons lemon juice in this to dull down the sugar a little as it is a lot of sugar.
