Ingredients

- 30 mL oil
- 225 grams free-range chicken (boneless, skinned and chopped)
- 225 grams chorizo sausage (cut into chunks)
- 3 celery sticks (chopped)
- 1 capsicum (red & 1 green, seeded & chopped)
- 1 cup long grain rice
- 200 grams chopped tomatoes
- 600 mL chicken stock
- celery leaves (to garnish, optional)
- 5 mL black peppercorns
- 5 mL cumin seeds
- 5 mL white mustard seeds
- 10 mL paprika
- 5 mL chilli powder
- 5 mL dried oregano
- 10 mL dried thyme
- 5 mL salt
- 2 garlic cloves (finely chopped)
- 1 onion (sliced)

Directions
- to make the Cajun spice mix, dry-fry the peppercorns, cumin and mustard seeds over a medium heat until they give off their aroma. Grind the dry-fried spices, then add the paprika, chilli powder, oregano, thyme and salt and grind again. Put the spice mixture into a food processor with the garlic and onion and process until combined.
- Heat the oil in a heavy based frying pan. Fry the chicken and chorizo sausage until lightly browned. Remove from the pan and set aside. Fry the celery and peppers for 2-3 minutes. Return the chicken and chorizo to the pan.
- Add the spice mix and cook, stirring, for 2-3 minutes. Add the rice, the tomatoes and stock and bring to the boil, stirring constantly. Lower the heat, cover the pan and simmer gently for 15-20mins, until the rice is tender and all the liquid has been absorbed. Garnish with celery leaves and serve immediately.
