- 1 lb. chicken livers (fresh, any fatty or squiggly bits removed, cut into a half-inch dice)
- 2 Tbsp. minced shallots
- 2 Tbsp. butter
- 1/3 cup cognac (or madeira)
- 1/4 cup whipping cream
- 1/8 tsp. ground allspice
- 1/8 ground pepper (I used white pepper because I didn’t want any black flecks)
- 1/2 tsp. salt (plus extra for adjusting season at the end)
- 1 pinch dried thyme
- 1/2 cup butter (melted)
- baguette toasts (Crispy, or crackers to serve)
- compote (Fruit, or jam, optional)
