Description
A little sweet and spicy, and reliably moist and juicy, this is the chicken breast recipe you’ll be turning to again and again. The secret is to briefly pound the meat between sheets of plastic wrap. This tenderizes the meat and also ensures that it’s evenly thick, so the chicken stays juicy and all portions cook at the same time. A quick, zesty rub made of pantry ingredients adds flavor and a nice crust. Feel free to customize the recipe with your own favorite spices and herbs. Ingredients
- nonstick cooking spray (or use a little vegetable oil or olive oil)
- 4 boneless, skinless chicken breasts (6 to 8 oz. each)
- 1 1/2 Tbsp. extra-virgin olive oil
- 1 1/2 Tbsp. packed light brown sugar
- 1 Tbsp. chili powder (mild)
- 1 tsp. garlic powder
- 3/4 tsp. salt (table salt or fine sea salt)
- 1/2 tsp. black pepper
Directions
- Preheat oven to 425°F. Line a small rimmed baking sheet with aluminum foil and mist evenly with cooking spray.
- On a work surface place a chicken breast between sheets of plastic wrap. Using a rolling pin, flat side of a meat mallet, or a saute pan, pound the chicken breast until it’s an even 1/2 to 3/4 inch thick. Repeat with remaining chicken breasts.
- Set chicken on the baking sheet and drizzle with olive oil.
