- 3 cans Massaman curry paste (or 3/4 cup from large container)
- 4 cans coconut milk (do not use low-fat)
- 4 chicken breasts (cubed)
- 3 broccoli (trees)
- 3 potatoes (large, peeled and cubed)
- 1 sweet onion (large, sliced)
- 3 cups jasmine rice
- 1/2 cup creamy peanut butter

Directions
- Add curry to frying pan and fry lightly (do not cook through, just heat and sizzle slightly)
- Mix 1/4 cup of coconut milk into pan, lowering heat. Do not boil.
- Mix curry paste into milk, making a liquid paste. Add more milk if needed.
