- garlic powder
- salt
- red pepper
- Creole seasoning (or Cajun, Tony's, Slap Ya Mama, etc.)
- 2 1/2 cups flour
- 1 1/2 cups oil (olive or peanut are best)
- 1 yellow onion (large)
- 1 cup chopped celery (more if desired)
- 2 cloves minced garlic (more if desired)
- 2 green bell peppers (medium, seeded and chopped)
- 6 cups chicken stock
- 1 lb. smoked sausage (spicy, chopped, andouille and alligator work well, use more if you wish.)
- 1 dash Tabasco Hot Sauce
- cooked white rice
