- 16 oz. gluten-free pasta (I used Banza chickpea pasta)
- 1 3/4 cups sweet potatoes (rough diced, or yellow potatoes, sweet potatoes = more creamy)
- 1 1/4 cups vegetable stock (be certain this is gluten-free)
- 1 1/4 cups cashews (raw and not salted)
- 3/4 cup carrots (rough diced)
- 2/3 cup diced yellow onion (rough)
- 1/2 cup milk (dairy-free, I use hemp milk)
- 1/4 cup nutritional yeast
- 2 Tbsp. lemon juice
- 1 tsp. sea salt
- 1 clove garlic
- 1/2 tsp. smoked paprika (or sweet, I like the hint of smokiness in smoked paprika)
