- 1 pkg. pineapple (and Bacon Chicken Sausage, Sliced)
- 6 oz. pineapple tidbits (in pineapple juice, juice reserved)
- 1/4 cup lite coconut milk (use in place of 1/4 cup water for rice)
- 1/4 cup pineapple juice (use in place of 1/4 cup water for rice)
- 1 cup jasmine rice (Cook according to package instructions)
- 1 yellow onion (diced)
- 4 slices bacon (cooked crispy, chopped)
- 2 Tbsp. butter (unsalted)

Directions
- Cook Bacon and let cool, set aside.
- Cook jasmine rice according to package instructions, substituting 1/2 cup water with 1/4 juice and 1/4 coconut milk. Set aside and keep warm.
- Melt butter in sauté pan and cook onion until slightly browned and fragrant, add pineapple and sausage. Cook over medium heat 5-8 minutes or until sausage is warmed throughout. Add rice to skillet and mix together, reduce heat to low and cook 2-5 minutes.
- Serve with crumbled bacon on top...Enjoy!
