- 3 cups sweet potatoes (mashed, cooked)
- 2 cups sugar
- 6 large eggs
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. salt
- 1 stick butter (softened)
- 1 can evaporated milk
- 1 1/2 tsp. vanilla extract
- 1 pie crust (9" raw, homemade or store bought)

Directions
- Heat oven to 350*
- To get 3 cups mashed sweet potatoes, boil about 2 & 1/4 lbs. whole sweet potatoes with the skin on for about 40 minutes until they are soft. Drain, let cool until you can handle them and remove the skin.
- Mash the potatoes in a large mixing bowl. Let them mostly cool. Beat in the sugar, eggs, cinnamon, nutmeg, salt, butter, milk, and vanilla. Pour into the unbaked pie crusts.
- Bake for 10 minutes then reduce heat to 300*. Bake for 45-50 minutes more until the filling is set and no longer wobbly in the center.
