  • 3 cups sweet potatoes (mashed, cooked)
  • 2 cups sugar
  • 6 large eggs
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 stick butter (softened)
  • 1 can evaporated milk
  • 1 1/2 teaspoons vanilla extract
  • 1 pie crust (9" raw, homemade or store bought)

    Directions

    1. Heat oven to 350*
    2. To get 3 cups mashed sweet potatoes, boil about 2 & 1/4 lbs. whole sweet potatoes with the skin on for about 40 minutes until they are soft. Drain, let cool until you can handle them and remove the skin.
    3. Mash the potatoes in a large mixing bowl. Let them mostly cool. Beat in the sugar, eggs, cinnamon, nutmeg, salt, butter, milk, and vanilla. Pour into the unbaked pie crusts.
    4. Bake for 10 minutes then reduce heat to 300*. Bake for 45-50 minutes more until the filling is set and no longer wobbly in the center.
