- 2 Tbsp. mirin (sweet sake)
- 1 Tbsp. sake (cooking)
- 2 dried shiitake mushrooms
- 1/2 cup water (for reconstituting dried shiitake mushrooms; this reserve liquid is to be combined with the dashi stock)
- 1 cup mixed mushrooms (fresh, shimeji mushrooms, maitake mushrooms, and hiratake mushrooms)
