- napa cabbage (1/2 cup Chinese)
- 1 cup bread (panko, cups)
- 1 pinch sea salt
- 1 1/2 tsp. miso paste
- regular mayonnaise (or 3 tbs vegan)
- 1 1/2 tsp. warm water
- 2 Tbsp. peanut oil
- 1 shallot (whites cut in to 1 inch diagonals, greens sliced finely)
- 1 tsp. seasoning mix (sushi, or dried seaweed finely sliced and chia seeds)
- pickled ginger (to serve)
