  • 1 seaweed (x2 inch pieces kombu, dried kelp)
  • 4 ounces daikon radish (cut into 2 inch strips)
  • 6 ounces mushrooms (assorted, tear by hand or cut into strips, I use maitake & shimeji mushrooms.)
  • 1/2 package soft tofu (Japanese, cut into 1/2 inch squares)
  • 1 tablespoon kosher salt
  • 1 1/2 tablespoons corn starch
  • 1 1/2 tablespoons cold water
  • 1 tablespoon ginger (peeled and finely shredded)
  • 2 green onion (chopped)
  • togarashi pepper (shichimi-, to garnish, optional)
