- 1 Tbsp. sunflower oil
- 2 garlic cloves (finely chopped)
- 3 cms ginger (piece, 15g, peeled, finely chopped)
- 250 grams pork mince
- 1/4 cup mirin
- 2 Tbsp. light soy sauce
- 1/4 cup miso paste (from Asian food shops and selected supermarkets)
- 1 Tbsp. chilli paste (from Asian food shops – substitute sriracha)
- 1 liter chicken stock (good-quality)
- 2 eggs (at room temperature)
- 200 grams ramen noodles (dried)
- 1 bunch pak choy (halved, substitute bok choy)
- bamboo shoots (optional)
- spring onions (optional)
- white sesame seeds (optional)

Warm & yummy!
I used chicken bone broth. Initially the broth seemed too light on seasoning/umami...
When the pork seasoning mixed into the broth as your eating is was perfect!
Did leave the egg soft boiled to make the broth even creamier(everyone got a whole egg).
Chopped Choi into 2" pieces, easier to eat & blanched in the broth.
I'll use the meat seasoning for many other meats & recipes, new fav!!!
