  • 3 tablespoons olive oil
  • 1 onion (medium, chopped)
  • 14.5 ounces chopped tomatoes
  • 1 cup chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon onion powder
  • 1 package jambalaya mix (Zatarain's Original)
  • 1 pound large shrimp (peeled and deveined)
  • 6 chicken wings
  • 2 tablespoons parsley (chopped, optional)

    Directions

    1. Mix salt, pepper and onion powder and rub on chicken wings. Heat oil in a dutch oven or other heavy pan. Place chicken wing pieces in the oil and fry until dark on each side (about 5 minutes each side). Remove from pan and place on a plate for later.
    2. Place onion in the dutch oven and saute until translucent (about 5 minutes).
    3. Stir in tomatoes, chicken broth and Jambalaya mix. Bring to a boil and then reduce heat to a simmer, cover and cook for about 15 minutes.
