- 1 cup vegetable stock
- 2 1/2 cups chopped tomatoes (fire roasted)
- 1 bell pepper (chopped)
- 1 onion (chopped)
- 4 celery stalks (chopped)
- 1 Tbsp. garlic (minced)
- 2 tsp. Cajun seasoning
- 1/4 tsp. oregano
- 1/4 tsp. thyme
- 1 tsp. Tabasco
- 1 tsp. salt
- 2 tsp. chili powder
- 16 oz. tomato sauce
- 1 bay leaf
- 15 oz. red kidney beans
- 16 oz. okra (frozen sliced)
- 12 oz. shrimp (chopped)

Directions
- Combine all ingredients except celery, beans, okra and shimp in large pot and bring to a boil
- reduce heat and simmer for 45 minutes until rice is tender
- add celery and beans and simmer for 10 minutes
- add okra and shrimp and simmer for 10 minutes

I took th'e liberty to add beef ste and substitute the okra for Lima beans. It’s what I had on hand. This recipe needed a carton of beef broth to keep it from burning underneath, even with stirring. The flavor is awesome! We liked it.
