  • 1 pound boneless skinless chicken thighs (cubed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/2 cups yellow onion (chopped)
  • 1 cup celery (chopped, 2-3 ribs)
  • 1 1/4 cups red bell pepper (chopped)
  • 1 1/4 cups green pepper (chopped)
  • 4 cloves garlic (minced)
  • 3 cups chicken broth
  • 28 ounces diced tomatoes
  • 8 ounces tomato sauce
  • 2 cups long grain rice (uncooked)
  • 1 1/2 tablespoons Creole seasoning (I use Tony Chachere's)
  • 1 bay leaf
  • 1 teaspoon dried thyme leaves
  • 1 pound smoked sausage (cut into 1/2 inch slices)
  • 1 1/2 pounds shrimp (cleaned and deveined)
  • fresh parsley (optional)
  • hot sauce (optional)

    It was tricky getting the rice to cook through the first time I made this. The second time I added the rice and boiled for a couple mins before adding the meats in and that was perfect. Delicious leftovers for days!

    I made this for a family of 6 and we all agreed it was amazing. I didn’t use any leads or anything like that but it was and still is good.

    The dish was very tasteful, however I recommend using 2 cups of chicken broth instead of 3. Will definitely cook again.

    Great flavor, but water portions are off. 3 cups of broth left the rice extremely mushy. I’d use maybe 2 cups to account for the tomatoes that are full of water.

    Delicious!!! I pretty much followed the recipe to a T. I added the chicken, shrimp, and Johnsonville Chorizo Sausage. It was perfectly seasoned with a little kick. I’m sure we’ll make it again! My husband is well travelled and thought I did a” bang up job “!

    Mediocre dish. Followed exact recipe, except I cooked the rice separately. Fine for the night, but will not make again.

    It came out delicious! I grilled some shrimp and served it on top. I used Cajun style andouille sausage which added a little more kick. I’ll definitely be making this again.

    Hands down the best recipe! I will be making this whenever I here New Orleans calling my name I have attached a picture of it while it was cooking. I didn’t have time to take a picture when it was done. My family devoured it!!
