This is a straightforward Jambalaya recipe, no tomatoes in the recipe I used vegan ingredients and was divine.

The recipe is fine but the directions are misleading when it comes to cooking the rice. Your rice will not cook off the heat for 25 mins. I’ve made this twice and both times, the rice was severely under cooked. You need to let the rice simmer for at least 30 mins and then let it sit for 10 mins off the heat. Otherwise, the flavors are great and it’s an easy recipe to make.

I have always made my jambalaya with tomatoes in the past, but this was really good! We don't eat pork so I mixed ground turkey salt, pepper, cajun seasoning, and hot sauce (I had Frank's in the cupboard), shaped into long patties and fried up. Let those chill, sliced up, fried up with 5 boneless skinless chx breasts, and continued with rest of the recipe. Makes a fair bit, about 10-12 reasonable servings. But had to take out of freezer because sone wouldn't stop eating!
