- 1 cup peas (dried red, kidney beans / red beans – You can use tinned instead, just don’t soak and over boil them!)
- 3 stalks escallion (spring onion)
- 1 large tomato
- 2 garlic
- 1 sprig thyme
- 1 Scotch Bonnet pepper
- 2 tsp. salt
- 1 Tbsp. butter (/ margarine)
- 1 pkg. coconut milk powder
- 1 dry coconut
- 1 stock cube (Knorr style vegetable, optional but recommended for a fuller flavour)
