- 1 scotch bonnet chile (stemmed, seeded, and minced, wear gloves!)

- 1 Tbsp. kosher salt (preferably Diamond Crystal brand; if using another brand, start with half this amount and add more to taste)
- 1 1/2 tsp. dried thyme
- 3/4 tsp. ground allspice
- 1 1/2 lb. ground beef
- 3/4 cup dried breadcrumbs
- 3/4 cup beef broth (or water)
- 3 cups all purpose flour
- 1 Tbsp. curry powder (preferably Jamaican)
- 1/2 tsp. kosher salt
- 6 oz. unsalted butter (cold, cut into small pieces)
- 1/2 cup cold water (or as needed)
- 1 egg (beaten with 1 tablespoon water)
