- 2/3 cup white onion (diced)
- 1/4 cup chopped fresh cilantro
- 2 tsp. minced garlic
- 2 tsp. jalapeño (seeded and diced)
- 1 tsp. cumin

- 1 tsp. red pepper flakes
- iceberg lettuce (to wrap it in)
- 2 cans chicken
- 2 bags rice (boil in bag, cooked)
- 2 cans cream of chicken soup (sometimes I use the Campbell’s cream of chicken with herbs)
- 1 lb. velveeta cheese
- 2 sticks butter
- 2 pkg. Ritz Crackers
