Description
I love cookies, but like most sweet treats, they don’t love me back. I have been looking for healthy alternatives for my favorite sweet treats. The cookies at Whole Foods are amazing, but I don’t want to make a trip there every time I have a cookie cravings. SO, after a few trials and twice as many errors I've combined some of my favorite things in a nice oatmeal cookie shell.
Ingredients

- 1 stick unsalted butter (soft, just let it hang out until you can squeeze it.)
- 3/4 cup dark brown sugar (firmly packed)
- 1/4 cup cane sugar (Sugar in the Raw, turbinado)
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 cups whole wheat flour
- 1 tsp. baking soda
- 1 tsp. canela
- 3 cups old fashioned oatmeal (1 1/2 cup whole & 1 1/2 cup ground, I use the NutriBullet with the flat blade)
- 1/2 cup zante currants
- 1/2 cup dried cranberries
- 1/2 cup coconut flakes
- 1/2 cup dark chocolate chips

Directions
- Preheat oven to 350.
- Mix the butter, brown sugar, and raw sugar until creamy. Add the eggs and vanilla, mix till creamy. Add the currants, cranberries, coconut flakes and chocolate chips. Then add in the rest of the dry ingredients.
- Place parchment paper on a cookie sheet and spoon cookies onto sheet with a table spoon. Use fingers to flatten cookies.
- Back for about 12 mins or until edge is brown. Let cool and enjoy!
