- 2 Tbsp. promise buttery spread
- 2 pita bread (wheat)
- 1 cup sweet onion
- 7 oz. roasted red peppers (drained and thinly sliced)
- 1 cup chicken cook pre
- 2 Tbsp. loosely packed fresh basil leaves (thinly sliced (optional))
- 2 Tbsp. grated Parmesan cheese
- 1/4 cup part-skim mozzarella cheese (shredded)
- 1/4 tsp. salt

Directions
- Preheat oven to 375°. Slice pitas horizontally to make 4 rounds. Arrange pitas on baking sheet cut-side up. Bake 6 minutes or until lightly toasted; set aside.
- Meanwhile, in 10-inch nonstick skillet, melt Promise® Buttery Spread over medium-high heat and cook onion, stirring occasionally, 5 minutes or until starting to brown. Add roasted peppers and chicken and heat through. Stir in Parmesan cheese, basil and salt.
- Evenly top pitas with chicken mixture, then sprinkle evenly with mozzarella cheese. Broil until cheese is just melted. To serve, cut into quarters.
