- 1 Tbsp. vegetable oil
- 1 lb. sweet italian sausag links, cut into
- 2 zucchini (small, thinly sliced)
- 1 eggplant (small, thinly sliced)
- 1/2 tsp. garlic powder
- 4 oz. pimentos (1 jar, sliced, drained)
- 2 Tbsp. grated Parmesan cheese
- 1 Italian bread (round loaf, or French bread, 10" diameter, split and toasted)
- 14 oz. pizza sauce (1 jar, Ragu® Quick)
- 1 cup provolone cheese (or mozzarella cheese, about 4 oz.)

Directions
- Preheat oven to 425°. In 12-inch nonstick skillet, heat olive oil over medium-high heat and cook sausage until thoroughly cooked. Add zucchini, eggplant and garlic powder. Cook, stirring occasionally, until vegetables are almost tender; drain.
- In medium bowl, combine pimientos, Parmesan cheese and sausage mixture; set aside.
- Arrange bread on ungreased baking sheets. Evenly top with Sauce, sausage mixture and provolone cheese. Bake 13 minutes or until heated through.
