  • 1 egg
  • 5 tablespoons corn flakes (ground)
  • 1/4 cup Parmesan cheese (shredded)
  • 1/2 teaspoon garlic powder

    Directions

    1. Mix the zucchini, onion, egg, corn flakes, Parmesan cheese, garlic powder and salt and black pepper in a large bowl.
    2. Grease a deep wide skillet with the olive oil and heat on medium-high heat.
    3. Form the cakes by adding 2 tablespoons mixture for each one directly on the skillet. Cook for 5 minutes, flip them, and cook for 5 more minutes and serve.
