- 2 chicken breasts (bone in skin on, cooked in the homemade stock, cooled and shredded)

- 1 lb. ground turkey
- 1 egg
- 1/2 small onion
- 2 garlic cloves
- 1/2 cup grated pecorino cheese
- chopped parsley (a handfull)

- 1 cup chopped carrots (each of, onions and celery)
- 3 garlic cloves (smashed)
- 1 escarole (big bunch, chopped or greens of your choice)
- 2 cheese (rinds, with some cheese attached)

- 1 1/2 cups small pasta (like acini di pepe, cooked according to package then rinsed with cold water and set aside in a container)
